What Is Pectin?

A naturally occurring heteropolysaccharide found in the cell walls of fruits, particularly concentrated in apple pomace and citrus peel. Pectin is widely used as a gelling agent in jams and jellies, as a stabilizer in yogurt drinks and fruit juices, and as a fat substitute in low-calorie foods. It is also sold as a dietary supplement for digestive health.

Mechanism of Action

Pectin is a complex carbohydrate composed mainly of galacturonic acid units. In the presence of sugar and acid, high-methoxyl pectin forms gels through hydrophobic interactions and hydrogen bonding. Low-methoxyl pectin gels in the presence of calcium ions. In the gut, pectin acts as a soluble dietary fiber — it is fermented by colonic bacteria into short-chain fatty acids (SCFAs), which may have prebiotic and cholesterol-lowering effects.
