What Is High Fructose Corn Syrup?

A liquid sweetener made from corn starch through enzymatic processing. HFCS-55 (55% fructose, used in soft drinks) and HFCS-42 (42% fructose, used in baked goods) are the most common forms. Chemically similar to sucrose in fructose-to-glucose ratio.

Mechanism of Action

Fructose is metabolized primarily in the liver via fructokinase, bypassing the rate-limiting phosphofructokinase step of glycolysis. High fructose intake can increase de novo lipogenesis, uric acid production, and hepatic triglyceride accumulation. However, these effects are dose-dependent and also occur with equivalent amounts of sucrose.
