What Is Citric Acid?

One of the most widely used food additives in the world. While citric acid occurs naturally in citrus fruits, over 99% of manufactured citric acid (MCA) is produced by fermenting sugars using the black mold Aspergillus niger. Used as a preservative, pH adjuster, flavoring agent, and chelating agent in foods, beverages, pharmaceuticals, and cleaning products.

Mechanism of Action

Natural citric acid is a key intermediate in the Krebs cycle (citric acid cycle) and is metabolized normally. However, manufactured citric acid may contain trace residues from the Aspergillus niger fermentation process. Some researchers and clinicians have reported that MCA can trigger inflammatory reactions in sensitive individuals, distinct from reactions to naturally occurring citric acid in fruits.
