What Is Monosodium Glutamate (MSG)?

The sodium salt of glutamic acid, a naturally occurring amino acid. Used as a flavor enhancer to impart umami taste. Glutamate is also naturally present in tomatoes, parmesan cheese, soy sauce, and mushrooms.

Mechanism of Action

Glutamate activates umami taste receptors (T1R1+T1R3) on the tongue. Dietary glutamate is extensively metabolized by intestinal cells and used as an energy substrate. Less than 5% of ingested glutamate reaches systemic circulation. The 'Chinese Restaurant Syndrome' hypothesis has not been reproduced in controlled double-blind studies.
